Christmas Protein Brownies

Tried our Cinnamon Stars & loved them? Well just you wait till you try our chrimbo inspired chocolate protein brownies. Soft & squidgy on the inside, light & airy on the outside. A brownie that we've adapted to ensure you feel a little less guilty after you've polished off the whole tray. In one sitting. Alone. On a Friday night. (yikes)!

What you need to buy:ULTRA WHEY™ PROTEIN

  • 200g quality dark chocolate (85%)
  • 250g unsalted butter
  • 50g chia seeds
  • 50g almonds
  • 80g quality chocolate ULTRA WHEY powder
  • 65g plain flour
  • 1 teaspoon baking powder
  • 360g fruit sugar
  • 4 large free-range eggs

What you need to do:

  1. Preheat the oven to 180°C/350°F/gas 4. Line a 24cm square baking tin with greaseproof paper.img_20161129_155403
  2. Add the chocolate, butter & almonds into a large bowl, heat through until melted using a pan of simmering water, stir regularly.
  3. Mix the chocolate ULTRA WHEY, flour, baking powder, chia seeds, linseed and sugar together in a separate bowl.
  4. Chuck the dry ingredients into the chocolate mixture and stir well. Beat the eggs, then mix in until you have a silky consistency.
  5. Pour the brownie mix into the baking tin, and place in the oven/ Aga for around 25 minutes. You don’t want to overcook them so, unlike cakes the skewer shouldn't come out clean – the brownies should be slightly springy on the outside but still gooey in the middle.img_20161129_155552
  6. Leave to cool in the tray before carefully moving to a chopping board & cutting into chunky squares. Why not add our homemade Macha, coconut & cashew butter protein ice-cream to complete a real cheat day pud. (Watch this space for our icecream recipe).
