Courgette Noodles with Creamy Avocado Basil Sauce

We love pasta, although the average pasta dish contains a tremendous amount of carbs and can cause blood sugar levels to rocket.

With only 200 calories and 16g of fat, we love this vegan, vegetarian-friendly dish – it’s just as tasty as pasta, but it’s not. It’s better.

If you’re craving a fresh, healthy meal but don’t fancy the thought of cooking, this is the perfect dish. Fantastically light, the creamy avocado basil sauce doesn’t leave you feeling bloated unlike other thick, heavy sauces on the market.

Courgettes are a major source of the antioxidant-rich vitamin C, which is needed to help protect the body against free radicals and help metabolise cholesterol. Courgettes contain hardly any calories and have a high-water content, which makes them a dieter's best friend.

They offer useful amounts of immune system-boosting vitamin C, and noteworthy levels of potassium, which is key to controlling blood pressure. The soluble fibre in the skin slows down digestion, and so steadies blood sugar and insulin levels. Soluble fibre also helps wards off constipation and counteracts irritable bowel symptoms.

INGREDIENTS

👉2 courgettes

👉149g cherry tomatoes, cut in half

👉3g fresh basil leaves

👉Salt and pepper (to taste)

INGREDIENTS FOR THE AVOCADO BASIL SAUCE:

👉1 avocado

👉1 tablespoon basil seasoning

👉½ tablespoon garlic

👉5 tablespoons olive oil

👉1 tablespoon lemon juice

👉½ teaspoon salt

METHOD

👉Start by making the sauce by mixing all the ingredients completely until smooth. If the consistency is too think, add more olive oil. Taste test and fine-tune to your liking. If you have a food processor, this will make the process easier, but mixing by hand is fine.

👉Using a spiraliser, spiralise courgettes and place into a bowl. If you don’t have a spiraliser, you can grate the courgettes to get that noodle-like pasta

👉Mix in cherry tomatoes, basil leaves, salt and pepper. Then blend with half of the avocado basil sauce and taste test to add more sauce.

👉Serve and enjoy!
