High Protein, Low Sugar Blueberry Muffins

METHOD

- Preheat the oven to 190° Cwheyplushc

- In a measuring jug, blend the soya milk and vinegar, stir and put to one side

- Combine all the dry ingredients in a large mixing bowl

- Make a well in the middle of the mixture

- Add the wet ingredients - but not the berries - and stir until blended

- Fold in the berries

- Spray a muffin tin liberally with non-stick cooking spray, or use paper baking sheets

- Use a tablespoon to fill up each well of the muffin tin, two thirds full

- Oven bake for 22-25 minutes (the toothpick, when inserted in the middle, should come out clean)

- Leave the muffins to cool before serving

- Put the muffins in a covered container and leave to chill in the fridge for up to one week

Serving Size: Makes 12 muffins.
