INGREDIENTS

👉 1 skinless salmon fillet, cut into chunks

👉 2 large eggs

👉 2 garlic cloves, chopped

👉 35g dried oats

👉1 tbsp lemon juice

👉1 tsp minced ginger

👉1 tbsp light soy sauce

👉 35g sesame seeds

👉 58g fat-free mayonnaise

👉 1 tbsp olive oil

👉 1 whole-wheat bun

👉 225g spinach

METHOD

👉 In a food processor, mix the salmon, eggs, garlic, oats, lemon juice, ginger, soy sauce, and mayonnaise. Pulse until coarsely chopped

👉 Shape into patties and then press sesame seeds into them

👉 Warm the oil in a large skillet over medium heat and cook patties, 2-3 minutes per side

👉 Serve on the whole wheat bun with spinach leaves and mustard if you like.
