Mini Chocolate Pancakes

Another quick and easy pancake recipe - the perfect protein fix for breakfast...

Ingredients:

1 ripe banana
2 eggs
1 scoop SCI-MX OMNI-MX RIPPEDCORE or ULTRA WHEY (Chocolate)
2 tsp stevia
1/2 tsp baking powder
2 tsp unsweetened cocoa powder
1 tsp coconut oil
1 tbsp greek yogurt
Fruit of your choice

Method:

Mash the banana in a bowl.

Add the eggs and whisk until fluffy.

Combine the protein with the baking powder, cocoa powder and sweetener.

Heat a pan over a medium heat with a little coconut oil.

Pour about a third of the mixture into the pan and let is sit for a few minutes. Turn it and wait a few more minutes until cooked. Repeat this stage until all the mixture has been used up (makes approx 3 pancakes).

Serve with yogurt and fruit.
