Protein Pizza With A Twist

Today, we've been lucky enough to share a pizza recipe with a bit of a twist  from fitness enthusiast and health concious foodie, Emma, from Dublin...

INGREDIENTS

For the "Pizza" base:

1 x ripe banana
2 x eggs
100ml almond milk
1 scoop SCI-MX OMNI-MX LEANCORE (Chocolate)
1tsp vanilla extract
2 tsp stevia
Half a tsp baking powder

For the spread:

Half a scoop of SCI-MX OMNI-MX LEANCORE (Chocolate)
1tsp unsweetened cocoa powder
1 tbsp almond milk

METHOD

1. Preheat oven to 180°C.
2. Mash the banana in a bowl.
3. Add the 2 eggs and whisk until fluffy.
4. Add the scoop of PRO VX™ PROTEIN, baking powder, sweetener, vanilla extract and almond milk (the mix should be fairly runny!).
5. Line a round cake tray with baking paper.
6. Pour the mixture into the tray and place in the middle of the oven for 15 minutes.
7. In the meantime, combine the half scoop of PRO VX™ PROTEIN with the cocoa powder and then mix it with the almond milk until it has a good consistency.
8. Take the base out of the oven and spread the chocolate mix on top of it.
9. Add fruit to the top and voilà!
