Apple Cinnamon Protein Muffins

Hit the gym and then the kitchen to whip-up these little beauties – muffins loaded with whey protein and fruit-derived carbs.

Ingredients:

150g oat flour
1 tbsp baking powder
0.5 tsp sea salt
2 scoops vanilla RECOVER 2.1 ISOLATE
1 tsp cinnamon
1 tsp ginger
100g baking splenda/stevia
2 egg whites
250ml almond milk
100g puréed apple
60g Greek yoghurt
2 apples diced

Instructions:

In a large bowl mix oat flour, baking powder, salt, protein powder and sweetener
In another bowl mix egg whites, almond milk, apple sauce, and yoghurt.
Combine the mixes and add chopped apples
Bake in individual cake/muffin cases for 15-20 minutes (until a fork comes out 'clean' when pricked)
